Indeed a Bourbon for the ages, or at least a well-deserved respite from the day today. From Heaven Hill Distillery's rick houses, this over-aged Bourbon has powerful aromas straight from the start. They seem to circle with bitter orange creme brulee, down to the toasted sugar topping. The palate softens, but only slightly as the sweetness begins to morph into a warm peach cobbler, emphasizing the brown sugar crumble. It is on the finish where we see the exacting complexity of this Bourbon with perfectly integrated charred oak, tobacco, and roasted coffee beans.

"As I dust off the lanai and polish my silver so it glistens in the soft sun of spring, the afternoons beg for a nibble and a tipple. As luck would have it, I am feeling an exceptional kind of Hibernian posh today. As is usual, Scotch was at the front of mind, but so was caviar from our good friends at Calvisius. I believe in breaking with convention wherever possible. The resultant challenge was to pair one of the world's most prized delicacies with Scottish Single Malts. I could hear the naysayers whispering words like Champagne and vodka into my ear."
"Brine and sea mist splash and are magnified when these two elements meet. This combo exploded with medicinal kelp and worn wood. The salt encompasses all and makes me feel like I am aboard the ship so vulnerable in Rembrandt's Storm on the Sea of Galilee."
"This particular caviar had some special bitter citrus notes that came sparkling through a plate of roasted nuts. When it met with the cask element of the Scotch, all manner of awesome broke lose and offered a lighter sea spray flavor with a distinct focus on complexity and a depth of flavor teetering on the brink of cured meats."
"George Clinton and P Funk All-Stars showed up for this one as it was the funkiest one of all! Must, brine, and wet rope all in attendance, but the firm hand of an Olorosso cask laid down the bass line and exposed walnuts, cedar, and prune notes."
