ELIJAH CRAIG BOURBON WHISKEY
18 YEAR OLD, SINGLE BARREL 750ML

Indeed a Bourbon for the ages, or at least a well-deserved respite from the day today. From Heaven Hill Distillery's rick houses, this over-aged Bourbon has powerful aromas straight from the start. They seem to circle with bitter orange creme brulee, down to the toasted sugar topping. The palate softens, but only slightly as the sweetness begins to morph into a warm peach cobbler, emphasizing the brown sugar crumble. It is on the finish where we see the exacting complexity of this Bourbon with perfectly integrated charred oak, tobacco, and roasted coffee beans.

"BOTTLED IN BOND"

The year was 1897, and whiskies were questionable at best but no doubt effective. With no actual guidelines to ensure quality, let alone safety measures, the government of the good ole US of A stepped in to make sure the general citizenry had a fighting chance of getting a decent pour of whiskey. The term Bottled in Bond was created, and to carry that term on the label, specific requirements had to be adhered to. The whiskey, all barrels included in a batch, had to be distilled by one distiller in one season, either spring or fall. The whiskey had to be bottled at 50% ABV and reached a minimum age of 4 years old in a cask. Distillers were excited to operate within these parameters because doing so allowed them to withhold paying taxes until the whiskey had reached full maturity and letting them hold onto their dollars for a bit longer. Needless to say, the plan worked, and Bottled in Bond still carries the faith and favor of the Federal government to this day and also implies a certain level of quality assurance on the bottles we drink now.

"As I dust off the lanai and polish my silver so it glistens in the soft sun of spring, the afternoons beg for a nibble and a tipple. As luck would have it, I am feeling an exceptional kind of Hibernian posh today. As is usual, Scotch was at the front of mind, but so was caviar from our good friends at Calvisius. I believe in breaking with convention wherever possible. The resultant challenge was to pair one of the world's most prized delicacies with Scottish Single Malts. I could hear the naysayers whispering words like Champagne and vodka into my ear."

"Brine and sea mist splash and are magnified when these two elements meet. This combo exploded with medicinal kelp and worn wood. The salt encompasses all and makes me feel like I am aboard the ship so vulnerable in Rembrandt's Storm on the Sea of Galilee."

"This particular caviar had some special bitter citrus notes that came sparkling through a plate of roasted nuts. When it met with the cask element of the Scotch, all manner of awesome broke lose and offered a lighter sea spray flavor with a distinct focus on complexity and a depth of flavor teetering on the brink of cured meats."

"George Clinton and P Funk All-Stars showed up for this one as it was the funkiest one of all! Must, brine, and wet rope all in attendance, but the firm hand of an Olorosso cask laid down the bass line and exposed walnuts, cedar, and prune notes."

"THE 50/50"

2 ounces Hayman’s Old Tom Gin
2 ounces Carpano Bianco Vermouth
Orange Bitters

The Martini is iconic, and only rarely can the original be improved. If ever someone knows what it means to be iconic, it is your father, so make him a drink that shows it. The 50/50 is unique regarding using a sweeter style of gin called Old Tom, Haymen's, to be specific. The gin itself is softer with beautiful floral notes with candied citrus and not much of the juniper influence. Vermouth is imperative in a Martini, but people have turned up their noses at vermouth over the years, and in some cases rightfully so, but with this drink, we will crank it up to equal parts Gin to Vermouth. Carpano is an Italian Vermouth producer, but they make an exceptional Blanc (Bianco) style, not to be confused with Dry Vermouth. Bianco Vermouth also tends to have more citrus and floral notes with fewer bitter elements. The fun part with this cocktail is dressing it up a bit; before you stir it, add a couple of dashes of orange bitters for an even brighter drink that sips like sunshine or aromatic bitters for a more savory touch. Stir well and strain into a chilled coup and garnish with lemon zest, serve it with gratitude and thanks to your father on a silver tray; after all, he’s the one who taught you to drink well.

"Hillrock"

Q: What is your favorite bottle you helped create, and why should we try it?

A: Hillrock Solera Aged Bourbon, - Exceptional Cask #1 This was Hillrock Estate Distillery’s first Barrel Proof Solera Bottling. After tasting through 18 Sherry Butts filled at the end of 2019 with our Solera Bourbon; we selected this cask. A deeply complex and rich whiskey that showcases power, finesse and balance.

Q: What is your favorite spirit and music pairing?

A: I'm a big jam band guy and I really enjoy Rye Whiskey! I love the spice of Rye whiskey in a cocktail, on the rocks or straight. Sometimes you need a drink whose flavor lasts as long as the jam.

Q: How did you wind up here?

A: In 2007 I visited the Hudson Valley and fell in love with the food, people and creative projects that were happening. So in early 2008 I moved here and started working for Millbrook winery. Four vintages later I switched from wine production to Whiskey when I was offered the Director of Operations and Head Distiller role for Hillrock Estate Distillery. Both companies taught me so much! I’ve been so fortunate to learn from people like John Graziano (Winemaker at Millbrook winery 35+yrs) and Dave Pickerell (Makers Mark, Whistle Pig, George Washington Distillery, Hillrock) These talented people helped teach me what I know.

Q: Which distillery impresses you currently?

A: Golden Harvest. Derek, Ashley and Pete have been doing great things since craft distilling started in NY! You must try their Distiller’s Reserve Apple Jack, and their Core Vodka is so consistent and tasty. ( Tough for a whiskey guy to admit 😉)

Q: What is your favorite clean drinking joke?

A: I’m giving up drinking until Christmas! Sorry, bad punctuation. I’m giving up, drinking until Christmas!
